Strawberry Short Cake Recipe

OK So we LOOVE Strawberries and we love Cake! So we thought what would be better than Strawberry Short Cake!  We made this delicious cake for an local farmer's market event and it sold out so quickly! So here you have our recipe! We hope you enjoy!

Cake Batter

  • 1 tablespoon of milk
  • 225 g unsalted butter
  • 225 g white caster sugar
  • 1 teaspoon vanilla extract
  • 4 large free-range eggs
  • 225 g self-raising flour
  • 1 teaspoon baking powder
  • Pinch of salt

  • 2 teaspoons of vanilla extract
  • 1½ tablespoon of icing sugar
  • 200 ml double cream
  • 250 g fresh strawberries

Step By Step Cake

  1. Preheat the oven to 180ºC (gas 4). Grease and line the bases of 2 round 20cm sandwich tins.
  2. Chop up the butter, then cream together with the sugar in a large mixing bowl or using a standing mixer until pale and fluffy.
  3. Add in the vanilla extract and mix.
  4. In a small bowl, beat the eggs and then slowly mix it into the bowl with the sugar and butter.
  5. In another bowl, sift the flour, baking powder and a pinch of salt and ensure to fold in but do not over mix.
  6. Add the milk to loosen the batter, then evenly divide it between the 2 cake tins.
  7. Bake the cakes in the oven for 22 to 25 minutes, or until golden and cooked through. To test, insert a skewer into the middle of a cake; it’s ready when the skewer comes out clean. Leave to cool in the tins for 5 minutes, then turn onto a wire rack to cool completely.

Step By Step Frosting

  1. After the cake is cooled, pour the cream into a large bowl and mix in the vanilla extract.
  2. Whisk until you have soft peaks.
  3. Sift in icing sugar and gently fold through. Place one of the cakes on your chosen plate or cake stand and spread over the vanilla cream.
  4. Hull and roughly slice the strawberries, then scatter on top of the second cake. Dust with icing sugar and decorate with extra strawberries, if you like.

Old Fashioned Lemonade Recipe

Now in the US we just call this Lemonade but as Sprite is Lemonade in the UK, it’s got a much funkier name ‘Old Fashioned Lemonade’. I am absolutely addicted to this stuff! To try and make it quickly, I usually go to Target and get myself some Crystal Light packets but nothing beats making it yourself!

2 cups granulated sugar

6 cups water

2 cups freshly squeezed lemon juice (usually around 6 – 8 lemons)

½ cup fresh whole mint leaves

old fashioned lemonade recipe

Make it!

  1. Make the syrup by adding 2 cups sugar and 2 cups of water in a saucepan and bring it to a boil. Stir until sugar is dissolved and then let it cool.
  2. Pour lemon juice and remaining 4 cups of water in a large pitcher.
  3. Add one cup of the syrup and taste.
  4. Gradually add more syrup until you like the taste
  5. Add in the mint leaves and refrigerate for one hour.
  6. When ready to serve, do so over ice.

Now just remember, in the unlikely scenario that you don’t finish the lemonade on the first day, get rid of the mint leaves because they loose their freshness and will start to turn brown.
