The Perfect Pimm's Cake

I don't know about you, but here, we absolutely love Pimm's and we also love cake! So it was only natural that we would end up combining the two to create one perfect pimms concoction! If you want to make it yourself, check out the recipe below!!

The recipe is for an 8" cake and will also make around 24 cupcakes.

Ingredients for the Cake

  •  50ml Pimms (the most important part of course)
  • 100g butter
  •  300g caster sugar
  •  6 eggs
  •  225g yoghurt - The plainer the better
  •  500g self raising flour
  •  1 tsp baking powder
  •  Lemon zest & juice
  •  5 finely chopped leaves of mint

Ingredients for the Icing

  • 300ml double cream
  •  50g icing sugar
  •  Zest of one orange
  • 25ml of Pimms

Cooking

Make sure the oven is preheated to 180 Degrees and that you have greased and lined 2 x 8" cake tins

Step 1

Whisk the butter and sugar together until pale & fluffy, add the eggs one by one, then mix in the yoghurt. Fold the flour and baking powder through, add the mint and mix thoroughly. Finally, add a large dash of Pimms, mix again and pour equal amounts of cake mixture into the tins.

Step 2
Bake the cakes for 20 – 25 mins or until golden. An easy way to see if the cake is done is to put a knife, cocktail stick or skewer in the center. If it comes out clean then it is done.

Step 3

Whip the double cream & icing sugar until you have reached a thick consistency, then fold through the orange zest. Ensure the cake has cooled down completely before filling. Use half of the cream mix to fill the cake and the other half for the top. Pile high and top the cake with strawberries, orange slices, mint and cucumber strips.

Strawberry Cheesecake Cupcakes!

These Strawberry Cheesecake Cupcakes are AMAZING! They are very fluffy on the inside and really do taste like Cheesecake.

Ingredients for Cupcakes

10 Digestive Biscuits
12 Tablespoons of butter at room temperature (for the crumble base)
1 1/2 cups of self raising flour
1/2 teaspoon of salt
1 cup and 2 tablespoons of sugar
1 teaspoon vanilla extract
12 Tbs unsalted butter, room temperature (for the cake part)
1/2 cup sour cream or plain yoghurt
4 large egg whites
2 cups fresh strawberries, hulled & coarsely chopped
Ingredients for Cream Cheese Frosting

1 Packet of Cream Cheese
12 tablespoons of unsalted butter
3 3/4 cups powdered sugar, sifted
1 tsp vanilla extract
Directions

Preheat the oven to 180 and line muffin tin with cupcake liners.
Get the digestive biscuits and crumble them in a food processor.
Then Add the Butter and continue to process the food together (make sure that you do not over process, you do not want to crumb the digestive biscuits too much!)
Then you need to press the mix into the bottom of the cupcake liners. The mix should stick together.
Using a spoon, press down on the crumble.
Bake for 3 – 5 minutes or until slightly brown.
In a medium bowl, beat the egg whites until stiff. Basically make it look like a meringue and set aside.
In a small bowl, mix the flour and salt. Leave the bowl for now.
In another bowl, cream the butter and sugar until it is light and fluffy. Continue to beat while adding the vanilla.
Add half of the flour mixture until blended.
Mix the sour cream or yoghurt.
Add remaining flour & mix until just blended.
Fold 1/3 of the egg whites into the batter until combined.
Add the chopped Strawberries and Egg Whites in. Again fold until combined.
Fill each muffin tin about 3/4 of the way
Bake for 25 minutes

Creating the Perfect Superbowl Helmet Cake!

By Regan Kindrick
on February 05, 2016

OK so I've always loved celebrating the Superbowl and anything to do with American Football, it's the American roots in me I guess! One day I thought what would be cooler than creating an actual helmet out of cake?! So I ended up making this baby...

Notre Dame Helmet Cake

Now I know any eagle eyed hard core football fans will point out that this helmet looks like Notre Dame's helmet and they can't get to the Superbowl! You're right, I'm a huge supporter of Notre Dame so I made this a while ago to help cheer them on.

So for this cake I used:

 Pink Summer Party Ideas

I absolutely love throwing summer parties and want to make everything just perfect! We threw this awesome Barbeque event last year and I got loads of great inspiration from Pinterest. I think a pink lemonade stand is the absolute cutest thing ever! It’s unique, especially if you’re in the UK and it’s refreshing so all you’re guests will love it!

This is one of my absolute favourite looks! It will give your party a rustic feel and all your guests will love it! I scoured high and low to find these milk bottle jars and I must admit finding them in the UK was pretty tough but I’m glad I kept persevering because now you can get them in the below link. I just love the pretty pink look here!

It’s not just Pink Lemonade that you can put in these giant Mason Jars and they look great but you can have so many different types of drinks to match your party colours! Check out all the different colour combos below:

 Bright Pink Summer Table Ideas

Adding a touch of pink is easy if you make your entire summer table pink! I like the mix and match stripes and polka dots here. It really makes the table pop against the white table cloth.
