The Perfect Pimm's Cake

I don't know about you, but here, we absolutely love Pimm's and we also love cake! So it was only natural that we would end up combining the two to create one perfect pimms concoction! If you want to make it yourself, check out the recipe below!! 

The recipe is for an 8" cake and will also make around 24 cupcakes.

Ingredients for the Cake

  •  50ml Pimms (the most important part of course)
  • 100g butter
  •  300g caster sugar
  •  6 eggs
  •  225g yoghurt - The plainer the better
  •  500g self raising flour
  •  1 tsp baking powder
  •  Lemon zest & juice
  •  5 finely chopped leaves of mint

Ingredients for the Icing

  • 300ml double cream
  •  50g icing sugar
  •  Zest of one orange
  • 25ml of Pimms

Cooking

Make sure the oven is preheated to 180 Degrees and that you have greased and lined 2 x 8" cake tins

Step 1

Whisk the butter and sugar together until pale & fluffy, add the eggs one by one, then mix in the yoghurt. Fold the flour and baking powder through, add the mint and mix thoroughly. Finally, add a large dash of Pimms, mix again and pour equal amounts of cake mixture into the tins.

Step 2
Bake the cakes for 20 – 25 mins or until golden. An easy way to see if the cake is done is to put a knife, cocktail stick or skewer in the center. If it comes out clean then it is done.

Step 3

 

Whip the double cream & icing sugar until you have reached a thick consistency, then fold through the orange zest. Ensure the cake has cooled down completely before filling. Use half of the cream mix to fill the cake and the other half for the top. Pile high and top the cake with strawberries, orange slices, mint and cucumber strips.
